Chef Owner - Iain Duncan
Chef Iain has worked in the restaurant and hospitality business for over 20 years.   He started as a cook at the age of 17 in Sacramento, California and trained in an authentic, classic Italian Restaurant specializing in fresh made pastas.  In 1992, he moved to Maui, Hawaii to live with family and broaden his Pacific Rim culinary experience at prestigious restaurants and 5-star hotels: The Plantation House in Kapalua, The Maui Marriott in Kaanapali, The Sea House at Napili Kai, and The Hula Grill in Kaanapali.  In 1998 he was hired as a Sous Chef at the The Ritz-Carlton, Kapalua taking his culinary, service and managerial skills to a 5 diamond level.  When the Executive Chef of the Ritz, Patrick Callerac, decided to purchase Chez Paul Restaurant in Oluwalu, Iain followed and became the Chef de Cuisine perfecting his classic French culinary techniques while learning the details of operating a  restaurant business.

In October of 2005, Iain was ready to buy his own restaurant and found the perfect little French Restaurant, Le Bistro, for sale on line.  With family in Eugene and Salem, Iain decided to move to Corvallis, and create Duncan Culinary Ventures, Inc. with the vision of owning several different styles of restaurants.   Just recently he opened AQUA Seafood Restaurant and Bar (www.aquacorvallis.com) to showcase Pacific Rim Hawaiian Regional Cuisine in a casual fun environment with the flavors and music from Hawaii.  

Chef de Cuisine - Hamid Serdani
He was born in the Mediterranean town of Cherchell in Algeria, studied at the University of Reims in France and started his culinary career at the renowned Institute of Culinary Arts in Stellenbosch, South Africa.  He speaks fluent French and English.  
After several years running kitchens in South Africa, he moved to Hood River, Oregon with his wife and son and worked as the Executive Chef at Good River Restaurant and Three Rivers Grill from 2004-2007.  
In July of 2007, he moved with his wife and son to Corvallis to become the Chef de Cuisine at Le Bistro.  We are very honored to have such a world class chef working to create an incredible culinary experience using delicate spice mixtures in his light and refreshing French Mediterranean specials.
